Tofu Stir Fry

OK, they’re not really vegetarians, however, because my wife is, we do tend to eat more non-meat dishes than average (I guess). Here is a stir-fry I made the other day with tofu. The kids were fighting over it. They had 2 servings apiece and they would have had more had I not told them to save some for Mom.

It was an easy recipe and quick, too.

Ody’s Tofu Stir Fry

1 16 oz package of firm or extra firm tofu cut into 1/2 inch cubes
1/4 cup vegetable oil + 2 tbs oil
1/2 green pepper, cut into strips
1/2 red pepper, cut into strips
1/2 medium onion cut into strips
1 cup broccoli crowns
1 cup mushrooms
2 cloves minced garlic
1/2 zucchini, cut into 1/4 inch thick rounds
1/2 yellow squash, cut into 1/4 inch rounds
1/4 cup teriyaki sauce
2 tbs brown sugar
1 tbs rice wine vinegar
Ground black pepper to taste

Pat dry tofu cubes to minimize splatter once you begin frying the cubes. Heat 1/4 cup of oil on med-high heat. Add tofu cubes to heated oil. THERE WILL BE SPLATTERING, NO MATTER HOW WELL YOU PAT THE TOFU DRY! Fry on all sides until light golden crispy look is achieved. Drain on paper towel.

In a wok or other large fry pan, saute onions, garlic, mushrooms and, if desired, an optional dried red pepper. Once mushrooms and onions have softened, add remaining veggies. After about 5-8 minutes of stirring over medium to low heat, add tofu to mixture.

In a separate bowl, combine teriyaki sauce, brown sugar and rice wine vinegar. add to mixture. Combine well and let moisture reduce so sauce is a bit thickened.

Serve over jasmine rice.

    Your kids don’t really eat zucchini, do they?
    Try powdering the tofu with corn starch (in Tupperware, shake-n-bake style) before stir-frying to keep it crisp.
